If you've never tried abalone before, now is the time. Here, it is quickly simmered with flavorful vegetables in a delicious soup with a tropical vibe.

2 Tablespoon(T)  oil
1   scallion, cut into 2 inch thin strips
1/2 Pound(lb)  lean pork, cut in thin strips
1 Slice(sli)  fresh ginger root, minced
1   abalone, cut into thin strips
8 Cup(c)  chicken broth
1 Tablespoon(T)  soy sauce
1 Teaspoon(t)  sherry
4 Ounce(oz)  dried mushrooms
2   eggs, beaten


Soak dried mushrooms in warm water for 1 hour (reserve water for soup). Drain and cut into strips. Heat oil in a skillet and saute scallions, pork strips and ginger root until pork loses its pinkness. In a saucepan, combine liquid from mushrooms and from abalone with chicken broth. Heat to boiling point and turn down to a simmer. Add mushrooms, pork, soy sauce, sherry, salt, pepper and ginger root. Simmer for about 15 minutes. Add abalone strips and taste for additional seasoning. Cook only for 1 or 2 minutes or abalone will toughen. Add beaten eggs and stir into soup. Turn off heat and let sit for 2 minutes covered. Serve quickly.
