The addition of shrimp gives this Mexican-inspired appetizer a touch of class. Save fat and calories by choosing baked tortilla chips instead of deep fried.

Ingredients

14 1/2 Ounce(oz)  tortilla chips
1   tomato, chopped
1/2 Pound(lb)  cooked small shrimp, shelled and deveined
1   fresh lime juice
1 Tablespoon(T)  avocado, pitted, peeled and chopped
8 Ounce(oz)  low fat cream cheese, softened
1/2 Cup(c)  salsa
16 Ounce(oz)  refried beans
1/4 Cup(c)  fresh cilantro, chopped

Preparation

In medium bowl, combine beans and salsa and mix well. Spread bean mixture onto large serving plate. In food processor bowl with metal blade or blender container, combine cream cheese, avocado and lime juice. Process until well blended. Spread cream cheese mixture over bean mixture. Top with shrimp and tomato. Garnish or sprinkle with cilantro. Serve with tortilla chips.
