Adobo Sweet Potato Latkes

Recipe Description
These latkes are kosher for Passover, so long as kosher ingredients are used.  Serve traditionally with sour cream and applesauce, or go chipotle crazy, and serve with chipotle ranch dressing.  Be careful not to go overboard, unless you like it HOT! HOT! HOT!

1 Pinch(pn)  pepper, to taste
1 Tablespoon(T)  adobo sauce
1/2 Cup(c)  canola oil
1 Pinch(pn)  salt, to taste
1/2 Cup(c)  currants
3 Cup(c)  large sweet potato, shredded
1 Cup(c)  matzo meal
3   chipotle peppers in adobo sauce, diced
3/4 Cup(c)  plain non dairy yogurt
1 Cup(c)  yellow or white onion, diced

Preparation

In a mixing bowl, combine the shredded sweet potato, onion, yogurt, peppers, adobo sauce, matzo meal, currants, salt and pepper.  Using your hands, mash everything together until well incorporated.  Preheat a frying pan with 1/4 inch of oil.  Form the mixture into patties about 4 inches in diameter and 1/2 inch thick.  Pan fry in hot oil for about 3 to 5 minutes per side, until golden brown and crispy.  Transfer to a paper towel lined plate to absorb any excess oil.
