2 Cup(c)  unbleached, all-purpose flour (5 mg)
2 Cup(c)  nonfat milk
1 Teaspoon(t)  lemon peel, grated
3   large eggs
1/2 Teaspoon(t)  cream of tartar
1 1/2   lemons, juiced
1 1/2 Teaspoon(t)  ground cardamom
2 Teaspoon(t)  featherweight baking powder


Preheat aebleskiver pan on burner at low.

Combine milk and lemon juice.

Bring the ingredients to room temperature. Of there is no time to do this, then warm milk to about 90°F. Place milk into medium mixing bowl. Add lemon juice and grated lemon rind.

Separate the eggs, placing the whites into a smaller mixing bowl. Put two egg yolks in with the milk. Using clean beater blades, beat the egg whites with the cream of tartar at high speed until stiff. Set aside.

Mix the flour and the cardamom with the milk-lemon mixture. Beat until smooth.
Turn heat up under aebleskiver pan to almost medium.

Add the baking powder to the batter.

Mix for about a minute. Gently fold the egg whites into the batter until evenly distributed. Oil or very lightly butter with unsalted butter each of the skiver cups.

Using a tablespoon or a 4-cup measuring cup, pour about 2 tablespoons of batter into each cup. Don't pour over the lip.

When skivers begin to bubble, use two forks to turn over the skivers.
Serve hot with syrup or jam.

Additional notes

Cook's Tip: Don't worry if you don't make a perfect turn, you can still save it. Try pushing down with one fork at the beginning of your rolling effort and lifting with the other. You are trying to get the uncooked batter into the bowl of the cup and the cooked portion over it. Let cook for about a minute, then roll the seams in the pan cups to smooth them out.
