African Coconut Tomato Halibut

Recipe Description
This is a one dish meal that I picked up while I was stationed on the ivory coast. This one dish meal combines the sweetness of coconut with tartness of tomatoes to make a very good dish

4 Tablespoon(T)  coconut milk
6 Tablespoon(T)  tomato paste
2 Quart(q)  water
2 Cup(c)  white rice, uncooked
1 Cup(c)  coconut peeled
1 Pound(lb)  halibut fillets
2 Pound(lb)  pumpkin (or yellow squash)
4 Tablespoon(T)  peanut oil
1 Teaspoon(t)  black pepper
1 Tablespoon(T)  salt
1 Teaspoon(t)  red pepperd, crushed
2 Cup(c)  yellow onions, chopped finely


Saute yellow onions, crushed red pepper, salt and black pepper in peanut oil until soft, but not brown. Peel pumpkin or yellow squash and cut into 1 inch slices. Lay over onion mixture. Place halibut fillets, cut into 1/2 to 1 inch slices carefully over pumpkin. Arrange peeled coconut, cut into 1 inch strips over the fish. Pour uncooked white rice over the coconut and sprinkle with salt. Combine water, coconut milk and tomato paste. Stir together gently. Pour liquid into the pot carefully so as not to disturb contents.

Cover tightly and allow to cook gently for about 30 minutes, until vegetables are tender and the liquid is absorbed. Serve directly from the dish in which it is cooked. Do not stir before serving. Section out portions, cut through, and remove with a wide spatula.

After trying this halibut recipe, it has become an instant favorite. The mix of pumpkin, coconut and tomatoes is utterly amazing!
