Recipe Description
I had these pancakes when I was in Africa. These are a deep fried treat that I wanted to share.

4   bananas (peeled) cut in 1/2-inch slices
1/2 Cup(c)  apricot liqueur
1/4 Cup(c)  cooking oil
1/2 Cup(c)  soft bread crumbs made by grating fresh bread
3 Tablespoon(T)  melted butter
4 Tablespoon(T)  sugar
1 Teaspoon(t)  ground ginger
1 Cup(c)  pancake mix


Marinate bananas in the liqueur for 30 minutes.

Remove banans from marinade and save the liqueur to make the pancake mix.

In a large bowl make the pancake mix using the leftover marinade, add the bananas to the batter and stir thoroughly.

Drop the mixture by tablespoonfuls (2 or 3 pieces of banana in each spoon) into hot oil until golden brown on both sides.

In a separate bowl, mix together the bread crumbs, melted butter, sugar, and ground ginger and sprinkle over the top of the cooked pancakes.

Additional notes

Cook's Tip: Crystallized ginger may be used instead of ground ginger. In which case, use 2 Tbs. sugar and 2 Tbs. crystallized ginger, minced finely.
