Almond Cherry Coffee Cake

Recipe Description
This coffee cake can be filled with any of your favorite dried fruits. We use cherries or prunes, but apples, raisins or cranberries work equally as well.

1 Cup(c)  dried cherries or prunes, chopped
2 1/2 Cup(c)  all purpose flour
1 Cup(c)  sugar
3 Teaspoon(t)  baking powder
1/2 Teaspoon(t)  salt
1/2 Cup(c)  milk
2   eggs
1 Package(pk)  ricotta cheese
1/2 Teaspoon(t)  almond extract
1/2 Cup(c)  margarine or butter, softened
1/3 Cup(c)  almonds, finely chopped
1 Cup(c)  almonds, chopped and toasted if desired


Heat oven to 350°F. Grease a 12 cup bundt cake pan or tube pan, 10 by 4 inches. Coat pan with 1/3 cup finely chopped almonds. Beat sugar, margarine, milk, almond extract, ricotta cheese and eggs in large bowl on low speed until blended. Beat on medium speed 2 minutes, scraping bowl occasionally. Beat in remaining ingredients (batter will be very thick). Spread in pan. Bake 55 to 65 minutes or until toothpick inserted near center comes out clean. Cool 20 minutes. Remove from pan and place on wire rack. Sprinkle with powdered sugar if desired. Serve warm or let stand until cool.
