Almond Mandarian Tossed Salad

We love the crunch of the caramelized almonds and celery this combined with the oranges create a great flavor pairing.

Ingredients

1/4 Cup(c)  sliced almonds
2 Tablespoon(T)  sugar
1/4 Cup(c)  vegetable oil
2 Tablespoon(T)  white wine vinegar
2 Tablespoon(T)  sugars
2   scallions
1 Slice(sli)  celery
1 Tablespoon(T)  parsley
1 Can(cn)  mandarin oranges
   black pepper
1/2 Teaspoon(t)  kosher salt,
1   romaine lettuce

Preparation

Preparation: rinse,dry and tear lettuce,slice scallions,chop dice celery,and parsley.

Caramelize the almonds: Heat a small or medium-size skillet (do not use nonstick) over medium heat. Add the almonds and cook, stirring constantly with a wooden spoon, until they are lightly toasted, about 45 seconds. Add the sugar and cook, stirring constantly, until it dissolves, 20 to 30 seconds.

Remove the skillet from the heat and continue stirring until the almonds are lightly browned, 20 to 30 seconds more.

Watch carefully, as they burn easily. Remove the caramelized almonds from the skillet and allow them to cool on aluminum foil. When they are cool enough to handle, separate them as best you can. (The almonds can be prepared a day ahead).

Store in an airtight container in a cool, dry place.

Combine all the dressing ingredients in a screw-top jar. Cover, and shake well.

Immediately before serving, toss the lettuce and celery in a large bowl. Add the oranges, scallions, parsley, and dressing, and toss gently. Top with the caramelized almonds.

Additional notes

After caramelizing the almonds, soak the skillet in warm, soapy water for 10 minutes. The sugar will come off easily.
