This "cookie" is a popular spice bar in Germany, and no wonder. The flavors tease your palate with just enough almond, lemon, and allspice to make you want more. These make a good dessert as well. Mix according to the directions, and the cake like batter will rise perfectly.

1 Teaspoon(t)  low sodium water
1 Teaspoon(t)  lemon zest, grated
1/2 Teaspoon(t)  almond extract
1 Cup(c)  confectioners' sugar
2 Teaspoon(t)  featherweight baking powder
1/2 Cup(c)  non fat milk
3/4 Cup(c)  honey
3/4 Cup(c)  white granulated sugar
2   large eggs
1/4 Teaspoon(t)  cloves, ground
1 Teaspoon(t)  allspice, ground
1 Teaspoon(t)  cinnamon, ground
1 Teaspoon(t)  lemon zest, grated
1/2 Cup(c)  unsalted whole almonds, ground or finely chopped
1   non stick cooking spray
2 1/4 Cup(c)  unbleached, all purpose flour
1 Teaspoon(t)  low sodium water


To make the bars: Preheat the oven to 400°F. Prepare a 17 by 1 inch baking or jelly roll pan by spraying the bottom and sides with non stick cooking spray, and then dusting it with flour. In a small bowl, stir together the flour, almonds, lemon zest, and spices. In a medium mixing bowl, beat the eggs and sugar until thick and smooth, about 4 minutes. Stir in the honey and milk with a wooden spoon. When the oven has reached 400 degrees F, gradually stir into the honey mixture, the flour mixture still using the wooden spoon, and beat until smooth. Add the baking powder and beat for about 1 minute, or until well mixed. Using a rubber spatula, spread the batter quickly and smoothly in the prepared pan. Put the pan into the oven immediately and bake for about 12 to 15 minutes, or until the bars are done. When you press down gently on the top it will spring back. While the bars are baking, prepare the glaze: Mix all the ingredients in a small mixing bowl and beat until smooth. Remove the bars from the oven, let stand for 1 or 2 minutes, and then turn out onto a wire rack. If you want the baked top to be the top of the bars, then top with another rack and invert once again. Spread the hot or warm bars with the glaze. You want them completely covered with a thin glaze. Immediately after glazing, cut into 1 by 3 inch or 1 by 2 1/2 inch bars. To store, place the bars on a paper plate or a dish and freeze. Once frozen, transfer to zip lock bags. Or, store on the shelf in a zip lock bag for up to 5 days.
