Recipe Description
The sour cream and vinegar give these rolls a slightly sour flavor. To make them even crisper, spray with some cold water halfway through the baking time.

Ingredients

1/2 Cup(c)  sour cream
1 Cup(c)  buttermilk
1 Tablespoon(T)  honey
2 Package(pk)  instant blend dry yeast
1 Teaspoon(t)  salt
5 Tablespoon(T)  oat bran
1 Cup(c)  whole wheat flour
4 Cup(c)  all purpose flour
1   egg, separated
1 Tablespoon(T)  apple cider vinegar
1/2 Cup(c)  water

Preparation

In large bowl, combine 1 cup all purpose flour, whole wheat flour, 3 tablespoons oat bran, salt and yeast. Stir until blended. In small saucepan, combine honey, buttermilk, sour cream and water, and heat over low heat until warm to the touch. Add to flour mixture along with vinegar and egg yolk and beat for 2 minutes. Stir in enough remaining all purpose flour with a spoon until a soft dough forms. On floured surface, knead in enough remaining flour until the dough is elastic, about 5 to 8 minutes. Place dough in greased bowl, turning to grease top. Cover and let rise until doubled, about 1 hour. Punch dough down and divide into 24 balls. Place balls on two greased cookie sheets. In small bowl, beat egg white until frothy and gently brush over rolls. Sprinkle with remaining oat bran, cover with a kitchen towel, and let rise for 30 to 40 minutes. Place a 9 inch square pan with 1 inch of water on the bottom rack of oven. Preheat oven to 350° F. Bake for 15 to 25 minutes, or until rolls are golden brown and sound hollow when tapped. Remove from cookie sheets and cool on wire rack.
