Recipe Description
Apple is always a great addition to spice cake, they seem to be made for each other. This cake has the perfect balance of sweetness and moist texture. You will want to serve this one again, and again.

1 Cup(c)  unsweetened coconut, premoistened with 1 tablespoon plus 2 teaspoons vegetable oil
1 Tablespoon(T)  unsweetened apple juice concentrate
1/4 Cup(c)  walnuts, chopped
1/4 Cup(c)  apples, peeled, cored and diced
8   egg whites or 4 extra large eggs
1 1/2 Teaspoon(t)  vegetable oil
1 Tablespoon(T)  unsweetened apple juice concentrate
2 1/2 Teaspoon(t)  cinnamon
2 1/4 Cup(c)  all purpose flour
2 1/2 Teaspoon(t)  baking soda
1 1/2 Teaspoon(t)  vegetable oil
1 Tablespoon(T)  unsweetened apple juice concentrate


Preheat oven to 325°F. Oil and flour a 13 by 9 by 2 inch baking pan. To make topping: In a medium sized bowl, combine pre-moistened, unsweetened coconut and chopped nuts. Stir and set aside. In a small bowl, combine apples and cinnamon. Stir and set aside. In a large bowl, combine eggs, oil, concentrate, and cinnamon. Beat for 1 minute with a hand operated mechanical beater. Add flour to egg mixture a little at a time, stirring, and then beat well by hand for 2 full minutes. Stir in baking soda quickly, and then mix (28 to 30 beats). Immediately pour mixture into prepared baking pan. Quickly sprinkle apples evenly over top of batter, then quickly sprinkle coconut and nut mixture over top of apples. Bake cake 30 minutes. Reduce heat to 300°F and continue baking for another 10 minutes, or until a cake tester inserted in center of cake comes out clean. Remove pan from oven and place on a wire rack until cake is completely cooled. To store, cover cake well with plastic wrap or in an airtight container and refrigerate or freeze.
