1 Ounce(oz)  can apricot halves, drained and coarsely chopped
1/4 Cup(c)  apple or prune butter
1   egg white
1   egg
1 Teaspoon(t)  vanilla extract
1/4 Cup(c)  vegetable oil
1/2 Cup(c)  packed light brown sugar
1/2 Teaspoon(t)  salt
1 Teaspoon(t)  baking powder
1 Cup(c)  undefined
1/2 Cup(c)  old-fashioned rolled oats


Preheat the oven to 350°F. Coat an 8x8-inch
pan with nonstick spray.

Stir together the oats, flour, baking powder, salt, and brown sugar. Using your fingertips, crumble the dry ingredients until there are no lumps in the brown sugar.

In a separate bowl, whisk together the oil, vanilla, egg, egg white, and fruit butter. Stir in the apricots, then pour the wet ingredients into the dry. Stir until all is moist.

Pour the batter into the pan. Bake for 40 to50 minutes, until firm to the touch and golden.
