1/3 | Cup(c) | light brown sugar, packed | |
3 | Pound(lb) | sweet potatoes, baked, peeled and mashed | |
3/4 | Cup(c) | dried apricots, diced | |
3 | Tablespoon(T) | apricot liqueur | |
4 | Tablespoon(T) | fresh lemon iuice | |
1 | Teaspoon(t) | lemon zest, grated | |
1/4 | Teaspoon(t) | kosher salt, or to taste |
Preparation
Preheat the oven to 350° F. Grease a 1 1/2 quart baking pan. Bring 2/3 cup water to a boil in a large saucepan. Add the butter and brown sugar, and stir until the butter has melted and the sugar has dissolved. Add the potatoes, dried apricots, liqueur, lemon juice, lemon zest and salt. Mix thoroughly. Transfer the mixture to the prepared baking pan and bake until heated through, about 30 minutes. Serve hot.
