Recipe Description
My friend Michael is the executive sous chef at the Hyatt Regency, and he very kindly sent me this recipe. A delicious and low carb salad.

Ingredients

3 Ounce(oz)  napa cabbage, shredded
1 Cup(c)  red cabbage, shredded
1/4 Cup(c)  red peppers, julienned
1/4 Cup(c)  carrot, julienned
1 Tablespoon(T)  green onions, sliced
2   cooked chicken breast halves, without skin
1/2 Cup(c)  spicy peanut dressing
1   sprig cilantro

Preparation

Thinly slice chicken breast on a bias. Place all ingredients except cilantro leaves in a mixing bowl and toss. Garnish with cilantro leaves.
