A lovely first course for a springtime menu. The garlicky mustard dressing, speckled with slivers of salt-cured prosciutto, is an unusual complement to tender asparagus spears. You might serve thedish with grilled chicken or steak.

1   lemon, cut into 8 wedges
2 Pound(lb)  asparagus
2 Teaspoon(t)  dijon mustard
3 Tablespoon(T)  lemon juice
4 Tablespoon(T)  olive oil
2 Clove(clv)  garlic
1/4 Pound(lb)  prosciutto, thinly sliced


To prepare Prosciutto Dressing: Cut 1/4 pound thinly sliced prosciutto into fine slivers. Place in a wide frying pan and add 1 tablespoon olive oil and 2 cloves garlic, minced or pressed. Cook over medium heat, stirring often, until prosciutto and garlic are golden, 8 to 10 minutes. Remove from heat and stir in 3 tablespoons each olive oil and lemon juice and 2 teaspoons Dijon mustard. If made ahead, pour into a small jar, cover, and let stand until next day. Stir before using. Snap off and discard tough ends of asparagus. Peel stalks, if desired. In a wide frying pan, bring 1 inch of water to a boil over high heat. Add asparagus. Cover and cook until tender crisp to bite, about 4 minutes. Drain, immerse in ice water until cool, and drain again. (At this point, you may cover and refrigerate until next day.) To serve, divide asparagus among 8 salad plates. Spoon dressing over asparagus. Serve with lemon wedges.
