Recipe Description
This smooth and creamy soup makes a great addition to outdoor barbecue meals. Crunchy macadamia nuts add a tropical texture twist.

Ingredients

3 Teaspoon(t)  lemon juice
1 Slice(sli)  fresh ginger root
1 Clove(clv)  garlic, minced
1 1/2 Cup(c)  medium cream
1/2 Cup(c)  heavy cream, whipped
1/2 Cup(c)  macadamia nuts, coarsely chopped
2   avocados
3 Cup(c)  chicken broth

Preparation

In an electric blender, combine all ingredients except creams and nuts. Puree until smooth and creamy. Turn into a large bowl and add medium cream. Stir and combine well. Chill thoroughly. When ready to serve, ladle into individual small bowls and top with a spoonful of whipped cream. Sprinkle with macadamia nuts and serve.

Additional notes

Tip: The soup can be prepared one day in advance and refrigerated. Garnish with whipped cream and nuts just prior to serving.
