Recipe Description
A really great falafel recipe that you are able to bake and avoid the extra calories of frying. Serve in pita bread as a meal, or make a dipping sauce and serve it as a delicious appetizer. Either way, you can't go wrong!

Ingredients

2 Teaspoon(t)  cumin, ground
1 1/2 Teaspoon(t)  coriander, ground
1   egg
1 Teaspoon(t)  salt
1 Dash(ds)  pepper
1 Pinch(pn)  cayenne pepper
1 1/2 Teaspoon(t)  lemon juice
1 Teaspoon(t)  baking powder
1 Cup(c)  breadcrumbs
15 Ounce(oz)  garbanzo beans, drained
1   onion, chopped finely
1/3 Cup(c)  fresh parsley

Preparation

Preheat oven to 400 degrees Place onion, parsley, and garlic in a food processor and process until smooth.

Add beans to mixture and pulse quickly--just until beans are mashed. DO NOT pulvervize; otherwise the mixture will be too smooth. The texture of the beans is needed.

In a large bowl add egg, cumin, coriander, pepper, and lemon juice; mix together. Once mixed, combine bean mixture to bowl.

Add bread crumbs to mixture until mixture is not sticky and will hold together.

Spray cookie sheet with non-stick spray.

Make even patties and place on cookie sheet. You should have about 8 patties.

Place in oven and bake for 10 minutes, flip and bake an additional 10 minutes.

Serve with cucumber or a yogurt dipping sauce.
