Balsamic Rice And Orzo Pilaf

Recipe Description
This is the perfect dish to bring to a potluck or get together. It doesn't have any "weird vegan" ingredients, so even your father-in-law won't be afraid to try it, plus it tastes good hot or cold.

1/4 Cup(c)  extra virgin olive oil, divided
5 Cup(c)  vegetable broth
2 Cup(c)  uncooked long grain rice (brown or white)
2 Cup(c)  water
1 Cup(c)  uncooked orzo
2 Tablespoon(T)  garlic, minced
10   fresh basil leaves, tightly packed, then cut into a chiffonade
1/2 Cup(c)  pine nuts, toasted
1/4 Cup(c)  balsamic vinegar
6   sun dried tomatoes packed in oil, chopped
1 Pinch(pn)  salt, to taste
1 Tablespoon(T)  extra virgin olive oil
1 Pinch(pn)  pepper, to taste


Bring the broth to a boil in a medium sized pot. Add 1 tablespoon of the olive oil and the rice. Reduce to a simmer, cover, and simmer for 20 to 30 minutes. Add the water, return to a boil, add the orzo, cover, and boil for about 7 more minutes. Uncover and let stand until all the moisture has been absorbed, 5 to 10 minutes. Mix in the garlic, basil, pine nuts, vinegar, remaining 1/4 cup oil, sun dried tomatoes, salt and pepper. Serve.
