Recipe Description
This is a great dish for a blustery cold evening or after skiing. Serve with beer, of course.

1 Cup(c)  milk
3 Tablespoon(T)  onion, chopped
1 Cup(c)  beer
3 Cup(c)  cheddar cheese, grated
2 1/2 Cup(c)  bread cubes
1 Dash(ds)  salt (to taste)
1/2 Teaspoon(t)  dry mustard
4   egg yolks, beaten
4   egg whites, beaten to stiff peaks
2 Tablespoon(T)  butter
2 Teaspoon(t)  caraway seeds


Combine milk and onion in a saucepan. Scald over low heat.

Add beer, cheese, 2 cups of the bread cubes, salt and dry mustard.

Stir until cheese melts. Lightly beat egg yolks. Slowly add to mixture, stirring constantly. Fold in stiffly beaten egg whites and pour into a well-buttered casserole.

Dot with butter; sprinkle with caraway seeds and remaining 1/2 cup of the bread cubes.

Bake in a 325°F oven for 75 minutes, or until a knife inserted in the center comes out clean.
