Recipe Description
This potato chowder is easy to make, and comes in handy on those late work nights when you feel like something fresh and homeamde, versus a frozen TV dinner.

1 Teaspoon(t)  butter
1/2 Teaspoon(t)  parsley, minced
1 Dash(ds)  pepper
1/2 Teaspoon(t)  salt
1 Teaspoon(t)  butter
5   potatoes

Preparation

Dice the potatoes and stew in a quart of salted water until tender.  Replenish water to a quart.  In a frying pan melt butter and add the flour.  Stir carefully to avoid scorching until flour is golden brown.  Add the potatoes and the water.  Stir until it is a creamy consistency, but do not smash all flour lumps.  Do not make it into thin soup consistency.  Add a little minced parsley, a little salt, pepper and butter.
