Recipe Description
Because I make this salad with black beans, you don't see the black olives, and they come as a taste surprise. It might be prettier to use a lighter color bean, but then the olives are no longer a mysterious ingredient.

Ingredients

1/2 Cup(c)  celery, chopped
1/3 Cup(c)  black olives, sliced or chopped
1/4 Cup(c)  onions, chopped
1/4 Cup(c)  pimiento stuffed green olives, sliced or chopped
1/4 Cup(c)  fresh cilantro or parsley, chopped
2 Tablespoon(T)  green bell peppers, minced
1 1/2 Tablespoon(T)  extra virgin olive oil
1 Tablespoon(T)  white wine vinegar
1/4 Tablespoon(T)  salt, to taste
1 Pinch(pn)  black pepper, freshly ground, to taste
1 1/2 Cup(c)  cooked black beans

Preparation

Place all the ingredients in a medium bowl and toss to combine.
