Ingredients

1 Cup(c)  unbleached flour
1 Cup(c)  whole wheat flour
2 Teaspoon(t)  baking powder
1/2 Teaspoon(t)  baking soda
1   cube butter
1 Cup(c)  sharp cheddar cheese, grated
1/4 Cup(c)  chives, fresh, grated
2/3 Cup(c)  buttermilk

Preparation

Blend flours, baking powder and baking soda together in the workbowl of a food processor, or by hand. Mix thoroughly.

Add a cube of butter and process until the flour has the texture of cornmeal and no lumps of butter remain.

Add cheese and chives and "pulse" until blended.

Add buttermilk and "pulse" just until blended.

Remove the mixture from the processor and knead just long enough to bring the dough together (about a dozen turns).

Roll dough about 3/4 to 1" thick and cut into biscuits.

Place biscuits on an oiled cookie sheet and bake for about 15 minutes at 400 degrees, or until golden brown.
