Feta cheese adds a layer of richness to these scones, and a light dusting of cayenne pepper adds the element of spice.

4 59/250 Gram(g)  self raising flour
5 59/200 Gram(g)  self raising wholemeal flour
1/2 Teaspoon(t)  salt
3 1/2000 Gram(g)  feta cheese
1 Tablespoon(T)  fresh chives, snipped
30 Teaspoon(t)  skimmed milk, plus extra for glazing
1/4 Teaspoon(t)  cayenne pepper


Preheat the oven to 400° F. Sift the flours and salt into a mixing bowl, adding any bran left over from the flour in the sieve. Crumble the feta cheese and rub into the dry ingredients. Stir in the chives, then add the milk and mix to a soft dough. Turn out the dough on to a floured surface and lightly knead until smooth. Roll out to 1/4 inch thick and stamp out nine scones with a 2 1/2 inch biscuit cutter. Transfer the scones to a non stick baking sheet. Brush with skimmed milk, then sprinkle over the cayenne pepper. Bake in the oven for 15 minutes, or until golden brown. Serve warm or cold.
