Long, thin wheat noodles give this Asian dish a mildly nutty flavor, that goes will with soy sauce and chinese black vinegar.

1 Tablespoon(T)  black chinese vinegar
2 Teaspoon(t)  dark soy sauce
1 Tablespoon(T)  chili oil
2 Ounce(oz)  sesame paste
1 Tablespoon(T)  sesame oil
1 Tablespoon(T)  sugar
2 Tablespoon(T)  sesame seeds
1 Tablespoon(T)  scallion, finely chopped
1 Cup(c)  bean sprouts
12 Ounce(oz)  thin wheat flour noodles


Cook the noodles according to the directions on the package.  When cooked, rinse under cold water and set aside.  Blanch the bean sprouts in a large pan of boiling water for 30 seconds.  Drain and set aside.  To prepare the sauce:  Beat all the ingredients together until the sauce is smooth and thick.  To serve, toss the noodles in the sauce, stir in the bean sprouts and sprinkle with the scallion and sesame seeds.
