Chicken And Pasta Soup

Wonder what to do with leftover chicken or turkey?  Chop it and drop it into this pretty, hearty vegetable and pasta soup.

Ingredients

2 Tablespoon(T)  parmesan cheese, grated (optional)
1/2 Cup(c)  zucchini, halved lengthwise and sliced
1 Cup(c)  bowtie pasta
2 Cup(c)  cooked chicken, chopped
1/4 Teaspoon(t)  black pepper
1/2 Cup(c)  onion, chopped
1/2 Cup(c)  celery, sliced
1 Cup(c)  carrots, sliced
1 Cup(c)  loose pack frozen cut green beans
12 Ounce(oz)  tomatoes with basil, garlic and oregano, diced
14 1/2 Ounce(oz)  white cannellini beans, drained and rinsed
2 Can(cn)  chicken broth

Preparation

In 4 or 5 quart slow cooker, combine chicken broth, cannellini beans, tomatoes with their juices, green beans, carrots, celery, onion and black pepper.  Cover slow cooker.  Cook on low heat setting for 7 to 8 hours, or on high heat setting for 3 1/2 to 4 hours.  If necessary, raise the temperature to high heat setting.  Add chicken, uncooked pasta and zucchini to cooker.  Cover slow cooker.  Cook about 20 minutes longer, or until pasta is tender.  If desired, top each serving with Parmesan cheese.
