Chinatown Fried Rice

Recipe Description
A traditional Chinese rice dish that can have many different types of meat added to it. This recipe utilizes ham, for a mild, sweet flavor.

3 Teaspoon(t)  vegetable oil
2   large eggs, lightly beaten
8 Ounce(oz)  mushrooms, trimmed and thinly sliced
1   red pepper, finely chopped
1 Tablespoon(T)  fresh ginger, grated and peeled
2 Clove(clv)  garlic, finely chopped
1 1/2 Cup(c)  medium grain white rice, cooked as label directs and cooled
1 Cup(c)  frozen peas, thawed
2   green onions, thinly sliced
4 Ounce(oz)  cooked ham, sliced into 1 by 1/4 inch strips
1/2 Cup(c)  chicken broth
2 Tablespoon(T)  soy sauce
1 Teaspoon(t)  asian sesame oil
1/2 Cup(c)  fresh cilantro leaves, loosely packed and chopped (optional)


In nonstick 12 inch skillet, heat 1 teaspoon vegetable oil over medium heat until hot. Add eggs and cook, stirring with wooden spoon, until eggs are scrambled, about 2 minutes. Transfer eggs to plate and set aside. In same skillet, heat remaining 2 teaspoons vegetable oil over medium high heat. Add mushrooms and red pepper. Cook, stirring occasionally, until tender and lightly golden, about 10 minutes. Add ginger and garlic. Cook, stirring, 1 minute. Add rice, peas, green onions, ham, broth, soy sauce, sesame oil and scrambled egg. Cook, stirring and fluffing rice with fork, until heated through, about 3 mintues. Toss with cilantro, if desired.
