Recipe Description
These sweet and hot potatoes are delightful with dishes that feature tart tomatillo sauces, and strong beef or game entrees.  Keep an eye on the sauce and keep the heat low, as the sugar burns easily.

Ingredients

1 Tablespoon(T)  unsalted butter
3 Pound(lb)  yukon gold potatoes, cut into 1/2 inch pieces
1/2   onion, chopped
2 Clove(clv)  garlic, chopped
1/2   habanero chile, seeded and minced
2 Cup(c)  coca-cola
1 Pinch(pn)  salt, to taste

Preparation

In a skillet, combine the butter, potatoes, onion and garlic over low heat.  Cook, stirring often, for 15 minutes, or until the onions begin to caramelize.  Add the habanero chile and the Coca-Cola and cook slowly for 15 to 20 minutes, or until the potatoes are tender.  If the liquid starts to cook away before the potatoes are done, add a little water.  The liquid should be reduced to a light syrup.  Season to taste with salt.  Transfer the potatoes to a serving bowl and spoon the liquid over the top.
