Cornmeal Waffles With Special Honey Topping

These are special waffles that my grandma would make only on special occasions.

2   eggs, separated
2 Cup(c)  buttermilk
6 Tablespoon(T)  butter , melted
3/4 Cup(c)  corn meal
2 Teaspoon(t)  baking powder
1 Teaspoon(t)  baking soda
1/2 Teaspoon(t)  salt
2 Tablespoon(T)  sugar
1/4 Cup(c)  wheat germ
1 Cup(c)  whole wheat flour


Prepare Honey Topping (see below for recipe); keep warm.

In a medium-size bowl, beat egg yolks, buttermilk, and butter until blended.

In a large bowl, mix flour, cornmeal, baking powder, baking soda, salt, sugar, and wheat germ.

Add egg yolk mixture; stir to blend.

In a small bowl, beat egg whites with a wire whisk or an electric mixer until they hold distinct but moist peaks. Fold into batter just until blended.

Bake batter in a preheated waffle iron until golden brown.

Serve with Honey Topping.

Additional notes

Honey Topping:

In a small pan, combine 1 cup honey, 6 tablespoons butter or margarine, and 4 teaspoons lemon juice. Stir over low heat until butter is melted. Makes about 1 cup.
