Recipe Description
This cheesecake features an unique crisscrossed top, not found on more tradtional cheesecakes.  Serve cut into small, 2 inch squares, as this is one rich dessert.

1 Pound(lb)  ricotta cheese
1   egg white
3 Tablespoon(T)  candied orange rind, finely chopped
2 Tablespoon(T)  butter
1 Teaspoon(t)  vanilla
2/3 Cup(c)  sugar
3   eggs
3 Tablespoon(T)  sour cream
1   egg yolk
1   egg
1/3 Cup(c)  margarine
2 Teaspoon(t)  baking powder
2/3 Cup(c)  confectioners' sugar
2 3/4 Cup(c)  all purpose flour, sifted


To make dough:  Cut the margarine into the flour with a knife and rub in with fingertips.  Add the rest of the ingredients.  Knead the dough for few minutes.  Refrigerate.  To make filling:  Beat the eggs with the sugar for 5 minutes.  Add vanilla and beat some more.  Combine with the cheese, mixed with butter and orange rind.  Roll out 2/3 of the dough to fit a 9 by 12 pan, buttered and sprinkled with bread crumbs.  Bake in moderate 375 degree F oven for 10 minutes.  Cool for few minutes.  Spread the filling.  Form thin rolls from the rest of the dough.  Place them diagonally crisscrossed on the cake.  Spread with egg white.  Bake another 40 minutes.  Cool and cut into 2 inch squares in the pan.  This cake is best the same day.
