Recipe Description
Most of this thick marinade will cling to the chicken, giving it a glazed look after grilling.

Ingredients

1/2 Teaspoon(t)  salt
3 Tablespoon(T)  soy sauce
1/4 Cup(c)  lime juice
1/3 Cup(c)  vegetable oil
1   small serrano chili
3 Clove(clv)  garlic
1   1 inch piece ginger root, peeled
1/2 Cup(c)  cranberries, dried
3 Pound(lb)  broiler fryer chicken, cut up

Preparation

Prepare cranberry marinade:  Place all ingredients in blender or food processor.  Cover and blend on high speed 1 minute.  Place chicken in shallow nonmetal dish or resealable plastic bag.  Pour marinade over chicken.  Turn chicken to coat with marinade.  Cover dish or seal bag and refrigerate at least 8 hours, but no longer than 24 hours.  Brush grill rack with vegetable oil.  Heat coals or gas grill for direct heat.  Remove chicken from marinade and discard marinade.  Cover and grill chicken, skin sides up, 4 to 6 inches from medium heat for 20 minutes, then turn.  Cover and grill 25 to 40 minutes longer, or until juice is no longer pink when centers of thickest pieces are cut.
