A true Pennsylvania Dutch recipe. A great way to get the kids to eat fish, disguised in fun shapes.

1 Quart(q)  potatoes, mashed
1 Pint(pt)  salt cod fish
1/4 Teaspoon(t)  red pepper
1 Teaspoon(t)  black pepper
1 Teaspoon(t)  parsley, minced
2   onions, chopped
1   egg, beaten
1 Tablespoon(T)  butter
1/2 Cup(c)  cracker crumbs


Boil salted cod, after soaking in water.  Shred and mix with potatoes, pepper, salt, onion, parsley and butter.  Form into balls.  Dip balls into beaten egg and roll in cracker crumbs.  Fry to golden brown in butter or Crisco.  Drain and place on serving dish.  The clam dressing is a mixture of 1/8 pound of butter, browned, 10 chopped clams, salt and pepper to taste, a pint of milk and a teaspoon of chopped parsley.  Bring to a boil and pour over the codfish balls just before serving.
