Ingredients

2 1/3 Cup(c)  all purpose flour
2 Cup(c)  sugar
1 Teaspoon(t)  salt
1 Teaspoon(t)  cinnamon, ground
2 Teaspoon(t)  baking soda
1/4 Teaspoon(t)  baking powder
1/2 Cup(c)  unsweetened cocoa powder
1/2 Cup(c)  walnuts, chopped
1/2 Cup(c)  mini chocolate chips
3   large eggs
1 Cup(c)  vegetable oil
2 Teaspoon(t)  vanilla extract
3 Cup(c)  zucchini, unpeeled and grated

Preparation

Preheat oven to 350°F. In a large bowl, combine flour, sugar, salt, cinnamon, baking soda, baking powder, cocoa, walnuts and chocolate chips. In a medium bowl, whisk eggs slightly. Whisk in oil and vanilla. Stir in zucchini and add mixture to dry ingredients, mixing thoroughly. Pour into 2 lightly sprayed or oiled 4 1/2 by 8 1/2 by 2 1/2 inch loaf pans. Bake until a toothpick inserted in the center comes out clean, 50 to 55 minutes. Cool in pan on a rack for 10 minutes. Run a knife around edges and remove bread from pans. When cool, wrap in aluminum foil to store.
