After making this soup for the first time, I realized it was destined to become a low carb family favorite. It truly does satisfy the pizza craving. Yippee!

1 Tablespoon(T)  oil
2 103/125 Gram(g)  onion, chopped
3 53/100 Gram(g)  mushrooms, sliced
4 59/250 Gram(g)  green bell pepper, chopped
14 413/500 Gram(g)  pizza sauce, no sugar added
82 1/5 Teaspoon(t)  chicken broth
48 Teaspoon(t)  water
1 Teaspoon(t)  oregano, dried
3 Ounce(oz)  pepperoni, sliced
1 Cup(c)  mozzarella cheese, shredded


Heat the oil in large saucepan over medium heat. Add the onion, mushrooms and bell pepper. Cook, stirring frequently, until tender, about 7 minutes. Stir in pizza sauce, chicken broth, water, oregano and pepperoni. Bring to a boil. Lower heat and simmer about 5 minutes. Ladle into soup bowls. Top with cheese just before serving.
