Splendid Split Pea Dip

A delicious Greek dip recipe made with yellow split peas. It can be served either warm or chilled, and pairs especially well with pita bread.

Ingredients

1 Cup(c)  yellow split peas
2   small onions, 1 chopped coarsely and 1 chopped very finely
1 Clove(clv)  garlic, chopped
6 Tablespoon(T)  extra virgin olive oil
1 Tablespoon(T)  fresh oregano, chopped
1 Pinch(pn)  salt, to taste
1 Pinch(pn)  pepper, to taste

Preparation

Rinse the split peas under cold running water. Put in a pan and add the coarsely chopped onion, the garlic and plenty of cold water. Bring to a boil then simmer for about 45 minutes, until very tender. Drain the split peas, reserving a little of the cooking liquid, and put in a food processor. Add 5 tablespoons of the olive oil and blend until smooth. If the mixture seems too dry, add enough of the reserved liquid to form a smooth, thick puree. Add the oregano and season with salt and pepper. Pour the mixture into a serving bowl and sprinkle with the finely chopped onion and extra oregano if desired. Drizzle over the remaining olive oil.
