A crisp and cool salad of cucumbers, tomato and onion drizzled with a tasty vinaigrette.

2   medium cucumbers, with skin, cut into 1/4 inch slices
1/4   red onion, cut into 1/2 inch cubes
1   large ripe tomato, diced
1 Teaspoon(t)  oil and vinegar dressing
1 Cup(c)  dill weed, dried
1/2 Teaspoon(t)  parsley flakes
1/4 Cup(c)  olive oil
1 Pinch(pn)  salt, to taste
1 Pinch(pn)  pepper, to taste


Combine the cucumbers with the rest of the ingredients, except the salt and pepper, in a plastic refrigerator container. Cover tightly. Allow the salad to marinate for 24 hours in the fridge before serving. Do not freeze. Add salt and pepper to taste.
