Recipe Description
The thinner you can slice the sweet potatoes, the crisper they will fry.  These make an excellent snack or side dish.

Ingredients

2 Cup(c)  oil, for deep frying
2 Cup(c)  sweet potato, peeled and sliced paper thin
1 Dash(ds)  salt, to taste

Preparation

Pour the oil 2 inches deep into a 2 quart aucepan.  Heat the oil until it bubbles when a small piece of sweet potato is dropped in.  Place a small handful of potato slices in the oil.  Cook until slices lose their dark orange color and have brown blisters on both sides, about 3 minutes.  Drain on paper towels.  Repeat with remaining potato. Salt chips, if desired.

Additional notes

Variation:  To make potato chips, substitute plain white potatoes for the sweet potatoes.  Cook
unit very lightly browned.
