Recipe Description
Combined with a traditional chocolate icing, this cake is reminiscent of an oversized, fluffy chocolate chip cookie. The batter is too thin to support the nuggets of chocolate, so the chocolate icing is necessary to complete the job. You may be tempted to use brown sugar instead of white sugar in this recipe, but do not, as that would actually make the cake taste "oatier."

3 2/3 Cup(c)  oat flour
3/4 Cup(c)  sugar
1 Teaspoon(t)  baking soda
2 Teaspoon(t)  baking powder
1/4 Teaspoon(t)  xanthan gum
1/2 Teaspoon(t)  salt
2/3 Cup(c)  milk
2 Teaspoon(t)  apple cider
1/4 Cup(c)  oil
2   eggs
1   egg white
2 Teaspoon(t)  vanilla extract


Preheat the oven to 350° F. Grease a 9 inch round or square pan. In a medium bowl, combine all the dry ingredients. Stir well. (This will distribute the xanthan gum throughout the flour, for better absorption.) Add the remaining ingredients. Mix well, scraping the sides of the bowl at least once. The batter will remain quite thin. Pour the batter into the prepared pan. Bake for 30 to 35 minutes, until a toothpick inserted in the middle tests cleanly. Let cool. Frost with any chocolate icing.
