Vegan Bechamel Sauce

Recipe Description
This quick white sauce lends rich and decadent results to many a dish. Traditional bechamel calls for a touch of nutmeg for depth of flavor. This sauce works great on pizza or pasta, even tofu. Use it right away, because it tends to separate quickly as it cools.

Ingredients

1/2 Cup(c)  non dairy butter
1/4 Cup(c)  all purpose flour
1 Cup(c)  plain non dairy milk
1/8 Teaspoon(t)  nutmeg, grated
1 Pinch(pn)  salt, to taste

Preparation

In a pot, melt the butter until just beginning to bubble. Vigorously whisk in the flour until smooth. Add the milk and continue to whisk until desired thickness is achieved, about 1 to 2 minutes. Remove from heat and add the nutmeg, and salt to taste.

Additional notes

Variations: Garlic and basil: Omit the nutmeg and add 1 teaspoon garlic powder and 1 teaspoon dried basil. Curry: Omit the nutmeg and add 1 teaspoon curry powder. Sweet: Leave in the nutmeg and add 1/2 teaspoon cinnamon and 2 tablespoons granulated sugar (great over waffles or cinnamon rolls).
