I know it's good to cut down on fat in our diets, but I don't know if most people realize that SOME fat is essential. There is a big difference between saturated and unsaturated fats. Here's a link to a real explanation: http://science.howstuffworks.com/innovation/edible-innovations/fat3.htm, but in the meantime, I think of it like a sponge. I want the new, clean sponge instead of the old, "saturated" one. Saturated fats are saturated (or full of) crap that I don't want in my body.

Thanks, Creative Chef! That was a great explanation. I sort of knew the difference, but the way you explained it like a saturated sponge is a great image - I'll keep that in my mind.
