1 1/2 Cup(c)  all purpose flour, plus extra for dusting
1/2 Teaspoon(t)  baking soda
1/2 Cup(c)  butter, diced
3/4 Cup(c)  brown sugar
3/4 Cup(c)  flaked almonds, roughly chopped
1   egg, lightly beaten
1   orange zest
3 Drop(dr)  almond extract
2 Tablespoon(T)  milk
1/2 Cup(c)  pine nuts, finely chopped


Preheat the oven to 375°F. Lightly grease 2 cookie sheets. Sift the flour and baking soda into a bowl. Add the butter and rub it in with your fingertips until the mixture resembles fine bread crumbs. Add the sugar and almonds, then stir in the egg, orange zest, and almond extract and mix to a dough, adding a little milk if necessary. Turn out onto a lightly floured surface and shape into a cylinder about 9 inches long. Cut into thin slices and place on the cookie sheets. Sprinkle with the pine nuts, pressing them down lightly with your fingertips. Bake the cookies for 8 to 10 minutes until pale golden (you may need to cook them in batches). Allow to cool slightly before lifting them onto a wire rack, then leave to cool completely.
