Almond Paste Pears

These lovely candies resemble small pears but have the sweet, nutty flavor of almonds.

Ingredients

2   whole cloves
1   oil, for greasing
1 3/4 Cup(c)  almonds, ground
1/2 Cup(c)  superfine sugar
2 Tablespoon(T)  fine ground semolina
1   egg, beaten
1 Teaspoon(t)  orange flower water or rosewater, plus extra for brushing
2 Tablespoon(T)  confectioners' sugar, for dusting

Preparation

Oil a cookie sheet. Put the ground almonds, superfine sugar, and semolina in a bowl and mix together. Stir in the egg and orange flower water or rosewater and knead to a smooth dough. Break off small pieces of the mixture, about the size of a walnut, and form into pear shapes. Insert a clove in the top of each to form a stem. Place on the cookie sheet. Bake the almond pears in a preheated 300°F oven, for about 20 minutes, until lightly colored. Let cool. When the almond pears are cold, brush lightly with orange flower water or rosewater and then dust with sifted confectioners' sugar.
