American Macaroni And Cheese

The preparation method used in this recipe differs from more traditional approaches. The result is a creamier, richer sauce that is poured over the macaroni, then baked to golden crispness.

1 Cup(c)  elbow macaroni
1   onion, peeled, cut in half
1   sprig fresh rosemary
2 Cup(c)  skim milk, divided
2 Tablespoon(T)  all purpose flour
1 Tablespoon(T)  non fat powdered milk
1/2 Cup(c)  reduced fat american cheese, shredded and divided
1 Teaspoon(t)  margarine
1/4 Teaspoon(t)  salt
1 Pinch(pn)  pepper, to taste
2 Teaspoon(t)  fresh parsley, chopped

Preparation

Preheat the oven to 350° F. In a large saucepan, cook the macaroni in boiling water with the onion and rosemary, according to package directions or about 8 minutes. Drain, discarding the onion and rosemary and set aside. Put 1 1/2 cups milk in a medium sized saucepan over medium heat. In a jar with a lid, combine the remaining 1/2 cup milk, flour and powdered milk. Shake until completely dissolved. Slowly add to the warm milk in the saucepan, stirring constantly, until the mixture begins to thicken. Cover about 1 minute, stirring constantly. Set aside 2 tablespoons of the cheese. Add the remaining cheese, margarine, salt and pepper to the sauce. Stir until the cheese is melted. Pour the sauce over macaroni and toss gently to coat well. Spoon into a deep 2 quart casserole. Sprinkle the reserved cheese over all. Sprinkle lightly with parsely. Bake, uncovered, for 10 minutes, or until the cheese melts.
