Ingredients

2 1/2 Cup(c)  cake flour
1 2/3 Cup(c)  sugar
1 1/4 Teaspoon(t)  baking powder
1/3 Cup(c)  margarine, room temperature
1/3 Cup(c)  canola oil
1 1/4 Cup(c)  bananas, mashed, very ripe
2/3 Cup(c)  sour skim milk, divided
4   egg whites, slightly beaten

Preparation

Preheat the oven to 350ºF (175ºC).  Grease and flour two 9-inch cake pans or one 13 x 9-inch baking pan.

Sift the flour, sugar, baking powder, and baking soda together into a large mixing bowl.

 Add the margarine, oil, bananas, and half the milk; beat at medium speed for 2 minutes.

Add the egg whites and the remaining milk, beat for 2 minutes longer.  Pour into the prepared pans.

Bake the 9-inch layers for 35 minutes or the 13 x 9-inch pan for 45 to 50 minutes, or until a wooden pick comes out clean.

 Invert onto a cooling rack. Let stand for 10 minutes before removing from the pan.

 Cool completely before serving.
