Recipe Description
Originally from Italy, crunchy biscotti are twice baked. This recipe blends the flavors of licorice and citrus.

Ingredients

1 Cup(c)  sugar
1/2 Cup(c)  margarine, softened
2 Teaspoon(t)  anise seed, ground
2 Teaspoon(t)  lemon peel, grated
2   eggs
3 1/2 Cup(c)  all purpose flour
1 Teaspoon(t)  baking powder
1/2 Teaspoon(t)  salt

Preparation

Heat oven to 350°F. Beat sugar, margarine, anise seed, lemon peel and eggs in large bowl. Stir in flour, baking powder and salt. Shape half of dough at a time into rectangle, 10 by 3 inches, on an ungreased cookie sheet. Bake about 20 minutes, or until toothpick inserted in center comes out clean. Cool on cookie sheet 15 minutes. Cut crosswise into 1/2 inch slices. Place cut sides down on cookie sheet. Bake about 15 minutes or until crisp and light brown. Remove from cookie sheet.
