These fruity, spicy muffins are quick and easy to make and are perfect for serving for breakfast or tea, or for adding to a lunch box for a tasty snack. The appetizing aroma as they bake is out of this world.

1   egg, beaten
1/2 Cup(c)  milk
1/4 Cup(c)  butter, melted
2   small eating apples, peeled, cored and finely chopped
12   brown sugar cubes, coarsely crushed
3 Tablespoon(T)  caster (superfine) sugar
1 1/4 Cup(c)  all purpose flour
1 1/2 Teaspoon(t)  baking powder
1 Pinch(pn)  salt
1 1/4 Teaspoon(t)  cinnamon, ground


Preheat the oven to 400° F. Line a large muffin tin with six paper cases. Put the egg, sugar, milk and melted butter in a large bowl, and beat with a spoon until thoroughly combined. Sift in the flour, baking powder, salt and 1/4 teaspoon ground cinnamon. Add the chopped apple and mix roughly. Spoon the mixture into the prepared muffin cases. To make the topping, mix the crushed sugar cubes with the remaining cinnamon. Sprinkle over the uncooked muffins. Put the muffins in the center ofthe preheated oven. Bake for 30 to 35 minutes until well risen and golden brown on top. Transfer the muffins to a wire rack to cool. S erve them warm or at room temperature.
