2 Cup(c)  white whole wheat flour
1 1/2 Teaspoon(t)  baking powder, divided
1/2 Teaspoon(t)  salt
1/2 Teaspoon(t)  cinnamon
1/2 Cup(c)  applesauce
1/2 Cup(c)  flaxseed meal
1/4 Cup(c)  canola oil
1/2 Teaspoon(t)  vanilla
1/2 Cup(c)  milk
1 Cup(c)  frozen apple juice concentrate
1 1/2 Cup(c)  sweet potato, grated
1 Cup(c)  apple, grated

Preparation

Preheat oven to 350° F. In a medium bowl, combine flour, 1 teaspoon baking powder, salt and cinnamon. In a large bowl, combine applesauce with 1/2 teaspoon baking powder. Add flaxseed meal, oil, vanilla, milk and apple juice concentrate. Stir to combine. Slowly mix dry ingredients into wet. Mix in sweet potato and apple. Pour batter into a lightly oiled mini muffin pan. Bake for 25 to 30 minutes, or until a toothpick inserted in the middle of a grated apple muffin comes out dry.
