3/4 Cup(c)  banana, mashed
4   egg whites
1/3 Cup(c)  vegetable oil
1/2 Cup(c)  unsweetened apple juice concentrate
1 Teaspoon(t)  water
2 Cup(c)  all purpose flour
3/4 Teaspoon(t)  cinnamon
1/3 Cup(c)  walnuts, chopped
2 Teaspoon(t)  baking soda
1 Teaspoon(t)  water


Preheat oven to 350° F. Prepare 18 or 19 standard-sized muffin cups with paper liners. In a large bowl, stir together banana, eggs, oil, concentrate and water. Add flour, cinnamon and nuts. Mix well for 1 to 2 minutes. Stir in baking soda quickly, and then mix (28 to 30 beats). Immediately spoon batter into prepared muffin cups. Bake about 18 minutes, or until a cake tester inserted in the center of one muffin comes out clean. As soon as they are done, remove muffins from tins and cool on a wire rack. Serve warm or cool completely and store in an airtight container on countertop or freeze.
