Recipe Description
A healthy muffin that's also moist and tasty is hard to come by, but this one fits the bill. Tidbits of apple make the muffins naturally sweet and delectable, while the low fat ingredients help keep the calorie count down. Bran is nutritious, but most bran muffins are heavy and dense. These however, are surprisingly light and tender. If you are tempted to indulge just a bit, sprinkle on the cinnamon sugar topping for a pleasant crunch.

2 1/4 Cup(c)  wheat bran
2 Cup(c)  non fat milk
2 Tablespoon(T)  plain non fat yogurt
1 Tablespoon(T)  butter, for greasing the muffin cups
2 Cup(c)  whole wheat pastry flour
2/3 Cup(c)  light brown sugar, firmly packed
1 Tablespoon(T)  baking powder
1 Teaspoon(t)  baking soda
1/2 Teaspoon(t)  salt
1 Teaspoon(t)  cinnamon, ground
1 Teaspoon(t)  cinnamon, ground
2   large eggs
1/3 Cup(c)  canola oil
1/3 Cup(c)  unsweetened applesauce
2 Teaspoon(t)  pure vanilla extract
2   small, sweet apples, peeled, cored and cut into 1/4 inch cubes
1/3 Cup(c)  granulated sugar


Make the muffins: Place the wheat bran, milk, and yogurt in a large bowl and stir to combine. Let the bran mixture sit at room temperature until the bran softens, about 30 minutes. Position a rack in the lower third of the oven and preheat the oven to 350° F. Butter 15 standard muffin cups or line them with cupcake liners. Place the flour, brown sugar, baking powder, baking soda, salt, and 1/2 teaspoon of the cinnamon in a large bowl and whisk to combine well. Place the eggs, oil, applesauce and vanilla in a small bowl and whisk to combine well. Add the egg mixture to the bran mixture and stir to combine. Add the bran mixture to the flour mixture and stir with a rubber spatula until just combined. Fold in the apples. Do not over mix the batter or the muffins will be tough. Spoon the batter into the prepared muffin cups, filling them almost to the brim. Make the topping, if using: Combine the granulated sugar and the remaining 1 teaspoon of cinnamon in a small bowl. Sprinkle the top of each muffin with about 1 teaspoon of the cinnamon sugar mixture. Bake the muffins until they are golden brown and a toothpick inserted in the center of one comes out clean, 20 to 30 minutes. Place the muffin pan on a wire rack and let muffins cool for 10 minutes. Remove the muffins from the pan and serve warm.
