You can add extra raisins if you like more than those just in the raisin bread.

6 Slice(sli)  raisin bread, cubed
1/4 Cup(c)  butter, melted
4 Cup(c)  apples, cored, peeled and thinly sliced
1/2 Cup(c)  light brown or dark brown sugar, firmly packed
1/3 Cup(c)  water
1 Tablespoon(T)  fresh lemon juice
1/2 Teaspoon(t)  cinnamon
1/4 Teaspoon(t)  salt


Preheat the oven to 400°F. Heavily grease a 2 quart baking dish. In a medium bowl, toss together the bread cubes and butter. In a large bowl, combine the apples, brown sugar, water, lemon juice, cinnamon, and salt. Place 1/2 of the bread cubes in the bottom of the baking dish. Top with the apples (reserving the liquid from the bottom of the apple mixture), then top with remaining bread cubes. Pour the apple liquid over the bread cubes. Bake, covered, for 30 minutes. Uncover and bake 15 minutes longer.

Additional notes

Variation: Use white or whole wheat bread instead of raisin bread.
