2 1/2 Teaspoon(t)  cinnamon, ground
1 1/4 Teaspoon(t)  baking soda
1/2 Teaspoon(t)  baking powder
2 Cup(c)  granulated sugar
12 Ounce(oz)  applesauce
1 Cup(c)  salad oil
5   eggs
1 Tablespoon(T)  vanilla
1/2 Cup(c)  raisins
2 Teaspoon(t)  brown sugar, firmly packed
1/2 Teaspoon(t)  salt
3 Cup(c)  all purpose flour


In a medium sized bowl, mix flour, cinnamon, baking soda, baking powder and salt. Set aside. In a large bowl, beat granulated sugar, applesauce, oil, eggs and vanilla with an electric mixer on low speed until well blended, then beat on high speed for 2 minutes. Add flour mixture and beat on low speed until well blended. Stir in raisins. Spoon batter equally into 2 greased 5 by 9 inch loaf pans. Evenly sprinkle each loaf with 1 teaspoon of the brown sugar. Bake in a 325 degree F oven until a wooden pick inserted in center of each loaf comes out clean, about 1 1/4 hours. Let bread cool in pans on racks for 10 minutes, then turn out onto racks to cool completely. If made ahead, wrap airtight and refrigerate for up to 5 days. Freeze for longer storage.
